Finding desserts that are diabetic-friendly in stores may be difficult. However, there are many diabetic-friendly dessert recipes that you can find online which are both creative and delicious. Here are three diabetic-friendly summer desserts you can try this season!
Biscuit Ice Cream Cake
What better way to celebrate the season than with ice cream cake! This sugar-free ice cream cake is a pleasant and refreshing choice that people of any age can enjoy.
You need 200 grams of sugar-free biscuits, 500 grams of whipped cream, two tablespoons of ground cinnamon, and 150 milliliters of milk.
To make this, you must whip the cream with one tablespoon of ground cinnamon. Soak the biscuits in milk so that they will soften a little. After that, place a layer of biscuits in a freezer-safe mold, followed by a layer of whipped cream. You should do this twice. After layering, let them freeze for at least 24 hours before removing them. Slice them into portions and garnish the cake with a pinch of cinnamon.
Mango Ice Cream Cake
If you don’t like biscuits, why not try a fruity ice cream cake? The ingredients you will need for the base are six sugar-free digestives, 80 grams of desiccated coconut, and 100 grams of dates. For the filling, you will need 150 grams of raw cashew nuts that are soaked for eight hours, 120 grams of mango, 125 milliliters of coconut milk, and four tablespoons of agave syrup. You can add two tablespoons of sugar-free peach marmalade as toppings.
To make the base, start by crushing the biscuits in a food processor. Continue by adding dates and desiccated coconut. Spread the dates, biscuits, and coconut over the bottom of a spherical silicone mold. Set it aside in the fridge while you prepare the filling.
To make the filling, drain and dry the soaked cashews. Blend them with coconut milk, mango, and agave syrup in a food processor. Freeze it for at least six hours or ideally overnight on top of the biscuit base. After freezing, spread a thin layer of sugar-free peach marmalade and you’re ready to serve!
No Sugar Added Oaty Biscuit Chia Pudding
This is a healthy and fiber-rich option that is perfect after a summer meal. To make this, you will need two natural creamy yogurts, two spoons of chia seeds, five sugar-free oaty biscuits, and raspberries.
First, make the pudding. To each yogurt, add one spoonful of chia seeds. Allow three hours for the mixture to solidify in the fridge after mixing it in. The dessert should next be prepared in small glass jars or two glasses. Place a layer of sugar-free oaty biscuits on the bottom. The six biscuits should be crushed thoroughly and poured evenly into the cups or jars’ bottoms. Set aside a portion of the crumbled biscuits for decoration. Stir in the chia pudding. Fill the glasses to the brim with them on top of the base.
